How it started

A fire, a borrowed room and a menu on the back of a receipt

Freja came home from Lofoten in 2018 with a notebook of recipes and no restaurant. She cooked pop-up dinners in a friend's bakery on Jægersborggade, on a grill she built from an old oil drum, and sold out every Sunday for a year.

When the bakery moved, she took the lease, knocked out the ovens and built the hearth where they used to be. Glød means embers. The fire has not gone out on a service day since.
