Freja grew up salting fish on Fanø and cooked in Paris and Lofoten before coming home to open Glød in 2019.

About Freja

Freja grew up on Fanø, salting fish with her grandmother. She cooked in Paris for three years, then in Lofoten, where she learned to cook with nothing but wood, salt and patience.

She came home in 2018 with a notebook of recipes and no restaurant, and cooked pop-up dinners in a friend’s bakery on Jægersborggade on a grill built from an old oil drum. When the bakery moved, she took the lease and built the hearth where the ovens used to be.

In the kitchen

Freja lights the fire at noon and cooks every service. She writes the menu most mornings after the deliveries arrive, and still does the Tuesday market run herself.

Magnus looks after the cellar and the bar, and knows most of our growers well enough to visit them at harvest.

Elin bakes every loaf we serve, starting at five in the morning with a rye starter she has kept alive for twelve years.

Ida runs the dining room, the bookings and the private events, and is usually the first person you meet at the door.
