Since 2019

Freja grew up salting fish on Fanø and cooked in Paris and Lofoten before coming home to open Glød on Jægersborggade.

Langoustines from Læsø, vegetables from two farms on Stevns, and rye bread baked in the embers every afternoon.

Seven winters at the fire

  1. 2019

    The old bakery on Jægersborggade becomes Glød. One hearth, twenty-eight seats.

  2. 2020

    Closed to guests, open at the window. Bread and soup through the hatch every morning.

  3. 2021

    Baglokalet opens behind the kitchen, with one long oak table for twenty-four.

  4. 2022

    Elin comes over from Svaneke with her rye starter in a jar on the ferry.

  5. 2023

    Gården opens in the courtyard, for long summer dinners from May to September.

  6. 2024

    Eight stools at the counter, facing the fire, for walk-ins every night.

  7. 2025

    Lunch at the weekend, with the morning bake and whatever is left in the embers.
