Elin Sørensen

Elin bakes every loaf we serve, starting at five in the morning with a rye starter she has kept alive for twelve years.

About Elin

Elin ran a small bakery in Svaneke on Bornholm for eight years before Freja talked her into moving to the city. She brought her starter with her in a jar on the ferry.

She bakes rye, sourdough and cardamom buns in the wood oven before the kitchen wakes up, and uses flour from a mill on Fyn that grinds old Danish grain varieties.

Bread at the fire

Once a season Elin teaches a class at the counter. Twelve people mix and shape their own rye and take it home with a jar of her starter.

Freja Lindqvist

Freja grew up salting fish on Fanø and cooked in Paris and Lofoten before coming home to open Glød in 2019.

Magnus looks after the cellar and the bar, and knows most of our growers well enough to visit them at harvest.

Ida runs the dining room, the bookings and the private events, and is usually the first person you meet at the door.
