Magnus Holm

Magnus looks after the cellar and the bar, and knows most of our growers well enough to visit them at harvest.

About Magnus

Magnus trained as a carpenter in Aarhus and built half the shelves in our wine room. He found natural wine at a bar in Paris, spent two harvests in the Loire and the Jura, and never went back to wood.

Today he buys from around forty small growers who farm without chemicals, and from two Danish orchards that make cider the old way.

At the bar

Ask him for something you have never tried. He opens a bottle for the bar every night from 16:00, and pours the pairings at dinner.

Freja grew up salting fish on Fanø and cooked in Paris and Lofoten before coming home to open Glød in 2019.

Elin bakes every loaf we serve, starting at five in the morning with a rye starter she has kept alive for twelve years.

Ida runs the dining room, the bookings and the private events, and is usually the first person you meet at the door.
